Happy October!

Hi everyone! Now that Fall is officially here and our new website is up and running (how do you like it now??? I'd love to hear from you!) I'm going try AGAIN... to do better on my blogs. It's our busy wedding season so bear with me if I am slow. We are blessed to have some very sweet couples getting married this season and I'm so excited to help with their special day!

I'm doing a FB Challenge through Jasmine Star trying to learn about social media - it's a constant learning issue for me. It doesn't come easy like it seems to with the young people....

Anyway, today we were supposed to share our favorite fall food and mine is pumpkin bread. Several of the people in the challenge asked for the recipe so I thought I would do a blog and share it with Everyone...

It's super easy (since I'm not real savvy at cooking either) and makes 3 loafs so you can share one or two with a friend. :) I borrowed the pic since I haven't made any yet this year. It looks like it might have walnuts too... ?

3 cups of sugar

3 1/2 cups of flour

2 tsp Baking Soda

1/2 TBS Baking Powder

1 1/2 tsp salt

1 tsp nutmeg

1 tsp ground cloves

1 tsp cinnamon

4 whole eggs

1 can of pumpkin (15 oz)

1 cup oil

1 cup water

1 cup pecans chopped

Sift together all the dry ingredients in a mixer bowl and then add all the wet ingredients and mix well with the blender until smooth.

Grease 3 loaf pans (9x4) well and then dust with flour to prevent sticking.

Fill up the 3 pans evenly and bake at 350 for 45 minutes to an hour. When the tops start to crack it's usually done. Double check with a toothpick inserted in and comes out clean.

Let cool for about 5 minutes.

To keep them moist I would flip them onto a sheet of aluminum foil and wrap them up tightly. Perfect for giving as a gift. :)

You can mix it up by using walnuts or chocolate chips if you prefer instead of pecans or leave out the nuts if you prefer.
